I need to save all my email correspondence to a flash stick - how do I go about it.

File -> Import/Export -> Export to a file
File -> Archive
Or if you don't have many...click and drag them out of outlook and onto the flashstick.

Create a new pst file, copy all messages to that. Copy the pst file to your stick.
On my version its File > New > Outlook data file
[edit] I just knew that would happen!
