My girly hands cannot resist the prospect of 6s power in a small phone so I fancy a new iPhone se. They are available 'to order' tomorrow to be available on the 31st. What does 'to order' mean? Do I call apple and pay for it? Do I go in and pay a deposit? Register interest? How does this pre order thing work?

I'd assume you order it tomorrow, pay for it then it will arrive on the 31st.

Assuming the servers don't go into melt down/they don't sell out in the first 4 seconds.

Best of luck.

Where the fun in a pre-order?

Arn't you going to bivvy down for the night outside an Apple store, then we can all point and make Apple fanboi jokes during the media coverage 😉

Just order, and pay as if you would be buying something normally, from Apple here:

I used the Apple Store app as I find it quicker. Delivery scheduled for 31/3. Not sure this is going to change much as can see demand outstripping supply like the 6S. Although, I could be wrong.
