Knot Bar Fringe on Great Ancoats Street.
Great jukebox, staff are certifiable, brilliant beer, garden out back.
Marble Arch and The Angel on Rochdale Road.
All proper pubs, absolute belters.
They're the only real 'must dos' I can think of.

Curry in Al Faisal or This'n'That to start.

Port St. Beer house, the castle, trof, marble (bit of a trek but proper boozer.) Cafe beermoth is nice but not technically in nq.

If you're coming in via Piccadilly it would be rude not to pop into the Piccadilly Tap for a couple to warm up. Then I agree with Port Street, a trip to This 'n' That (check opening times they close early some days now) before heading up to the Marble Arch.

Castle Hotel (it's a pub), Oldham Rd, is bigger than it looks! rooms over two storeys and bands on in the room behind the bar, did I mention real ale win win.

Soup Kitchen has a lovely porter on (bit of a hipster place though).

if you're doing the crawl on the weekend and there's a big group of you, be prepared for a cluster****; the bars on the main strip get very busy - the ones rusty and slowoldman mentioned are better for groups
