Thinly sliced then lightly fried, crisped on the outside but still soft and just slightly pink in the middle. Nom nom and nom again.

I had it last night with onions, bacon and red wine, and a lovely celeraic mash. Never over cook it though.

Got to be calves liver.

Slice thinly.

Fry onion and rashers of streaky bacon then set aside (keep warm).

Fry liver in bacon fat.

Just before serving squeeze half a lemon over the liver.

Serve with mash potato.

Liver and kidneys are pretty much the most nutritional meat you can eat. Obvious really when you consider what their function is; to process good stuffs from food.

I love kidneys, but they're difficult to find these days, nice lambs' kidneys anyway.

Good source of protein and minerals, also unfortunately many of the breakdown products of the synthetic chemicals fed to animals accumulate in the liver.
Would personally only eat it on a regular basis from UK farmed lambs.

I've tried several times to like liver and kidney as it's fairly healthy and cheap but I just can't stomach the stuff 🙁

Well, more or less, HD.

trouble is Elf, both organs act as detoxifiers, fine when the substances are 'natural' and can be then eliminated, not so fine when the detoxed substances are synthetic and have no method of elimination.
They then accumulate and build up to potentially toxic levels.
Far worse in longer lived animals such as beef cows, not as bad in baby animals such as lambs and calves.......

Yeh but everything's poisonous really if you want to take it that far. You can worry yourself to starvation if you think too deeply about what's in all foods.

But Lambs'/calves liver is the stuff to go for, undoubtedly. I'd never eat pigs' liver.

Don't forget chicken livers (but only from hugh barely-credible approved free range, organic happy hens, of course)

It's this attitude amongst the maby-pamby nesh what means offal is fortunately relatively cheap. 🙂

Thin sliced liver.
Half an onion.
Bacon bits.
Clove of garlic.
Tomato pickle. If no tommy pickle is available then use tomato puree and a pinch of sugar.

Fry off the bacon to get it a bit on the crispy side.
Add the onions and garlic.
When them onions are cooked to your liking then add the liver.
Don't over cook the liver, a couple of minutes will do it.
Add the tomato pickle at the end, give it a good stir and serve.

Tis the food of the gods.

Sod that, chicken & pig, occassionally a bit of steak are the only animals that I chomp on - and only flesh at that.

Mmmmmm, suddenly been inspired to make up some liver kebabs, what d'ya reckon Fred ?
liver cubes dusted in paprika flour, green pepper chunks, unyunz, tomato quarters - smash under a hot grill, generous splash of encona - slap it all in a griddled pitta and serve with a side of pickled green chillies and a cold beer 😀

Liver is food of the gods! Bacon and liver casserole, chicken livers on toast, lambs liver cooked slightly pink and of course... pate.

What is not to like?

well so far I've only got as far as the cold beer, but the grill is on......

.....hmmm, sharp knives/hot grill/cold beers - could end up badly 😆

i opted for lambs liver and cumberland sausage, with cream and garlic mashed spuds, steamed broccoli and carrots.
oh and unyunz................twas divine 8)

I can still remember the fried chicken livers, French fries and cola float I had in a little store front cafe in Clarksdale Mississippi after driving down from Memphis, before waddling over to Rooster Records to check out what was current in Delta Blues. "Cheatin' Woman" by Lonnie Shields as it happened.
