I have some whole trout in the fridge. Easy option...parcel it up in some foil and bake it, dollop of mash potato and some boiled veg. Easy, but boring.

Now, what other stuff should I try? Current odds and sods in the fridge includes tomatoes, salad, half a tin of anchovies, half a packet of mozorella, eggs, fresh chilli's, posh chutney and a yellow pepper. Have time to go shopping later so don't let this limit you!

I know you lot love a bit of fine home cooking so lets hear it 🙂

Stuff it with chillis&other spices and oven bake, make a daal with the peppers and tomatoes in it (you do have lentils, don't you?) eat with the salad as a side.

My dad is a keen flyfisherman and does a mean smoked trout.

Rolled in oatmeal and pan fried (not deep fried). Deelish.

I always say the best thing with fish is simplicity.

I would grill the trout (oiled and salted of course) and serve with potato gratin, crisped bacon and served with a mozzarella salad using the bits you have

I'd personally keep the trout itself simple. Baked with salt, pepper and lemon.

You could work harder on the accompanying dishes though. Classic tomato and mozzarella could go in the oven - and how about Dauphinoise potatoes?

Don't forget the bottle of white, obviously.

Do have red lentils, might be a bit old but I like that idea...

I have a cobb BBQ so could smoke it, but I think thats one to save for the summer (if we don't miss it!)

Wine is off the menu as I'm on call... Great ideas, maybe I'll do the trout simple, but do some sort of chilli/tomato glaze/sauce sort of thing. Then the dauphinoise pots and the tomato/mozzy side salad.

Ahem..... the unhealthiest thing you can do with it.....

Cook it. Then thinly slice some spuds. Layer the spuds and the flaked fish in a shallow baking dish, with butter and plenty of grated mature cheddar all over. Cover with plenty of oregano and black pepper. Now here's the best bit... pour over half a pint of double cream and slam it in the oven for half an hour.

Its absolutely bloody delicious! You can feel your arteries hardening as you eat it. Then once you have, you'll need a doze

I did Dauphinoise potatoes with fillet steak at the weekend. I think I actually enjoyed the potatoes more than the meat. Is that wrong?

marinade it in lime juice and turmeric, pan fry with very little oil til the lime juice caramelises, then do a thai style slaw with finely shredded carrot/cabbage/shallots/finely chopped chillies and peanuts with a dressing of fish sauce/sesame oil/sesame seeds/soy sauce/lime juice/rice wine vinegar (a little).
or something like that but with noodles instead of slaw.

Coming together nicely...

Dauphinoise in.
Following this recipe for the glaze, though I added some fresh ginger.

And for once, it only cost me £1.50 in ingredients (cream and milk for the pots)

Bit better than Mondays Ricotta & Spinach Cannelloni that must have come to about £10 with all the stuff I had to buy. Tasted good though...

P.S Yes we eat late...be ready at 20:30!
