They have "explosive" hinges linked to the SRS system, looks like one of them has gone off.
How do I / can I open the bonnet without it?
Depends. I managed it on my Passat by removing the VW badge, sticking my hand up inside the hole and pulling the plastic cover off the release mechanism, which allowed me to grab a bit of cable with long nosed pliers. But I was only able to do that because I knew what the catch looked like. It'll vary by car.

Heh. The bonnet cable failed long after that. I don't think it was designed for as many operations as it got.
As per the video link most cars are a variation of pulling out a front grill.
Fords cunning plan to put a lock behind the front badge was/is great for seizing. Usually found on a filthy day when you’ve run out of screen wash or the oil light is on.
