Well, at the risk of being Un-PC, there is an long established ruling that "eggs is eggs" However, i am aware of how offensive that might be to some people.

eggs in or out of the fridge , but keep their temperature stable .
most problems with eggs happen when they are moved about . ie , in a hotel , the breakfast chef takes them out of the fridge to cook breakfast and put them back in the fridge a few hours later .
