I usually just cook for myself, and am looking for cookbooks or websites that have simple to prepare healthy meals.

You should just make big chillis, stews, curries etc and store them in freezer.

Sounds great in theory, unfortunately I can resist anything but temptation 😐
+1 for stew, I'm not generally a fan of veg/pulses but like them in a stew. Prep can be a hassle (takes me about 40 mins, mostly chopping although you could short-cut that with prepared frozen veg I guess), cooking is 45 mins (pressure cooker) and does 4 big portions worth (probably 6 sensible portions or more if you bulk it up after with bread/potato on the side etc.).
Can I suggest you get the Jamie Oliver 'Meals in 30 Minutes' book.
Then if you find a meal that can actually be done in 30 minutes please let me know what it is like.

TSY's suggestion is a good one. Cooking for one is [a pain in the ass | an excuse] (delete where applicable). Cook for four, then divvy up the rest into Tupperware lined with foil. Bang 'em in the freezer, and you can remove the Tupperware once frozen. Instant ready-meals.
I make sure I eat a constant supply of chinese meals to be sure of getting the perfectly-sized plastic cartons.

Cougar - does the foil come off easy enough for microwaving?

I'm set to make a huge batch of ox-tail and kidney stew as per Heston Blumenthingy on the tele last night... looked amazing and can just as easily be banged into pastry for a good pie.

It does, but thinking about it I think I'm using non-stick foil.

Last time I tried KY on toast it was pretty minging
Curry paste
diced chicken
chillies
peas
rice
cashews
cook together (well the chicken first)
+ a little lemon juice
dun.
Boil Haddock/Cod with a bit of salt until it's cooked.
Boil potatoes.
Boil some vegs.
There you go a meal.
new potatoes cleaned and sliced
put in baking tray
cover with chilli flakes and olice oil
bang in a couple of lamb chops
put in oven
cook
serve

i've got a word doc somewhere with a few veg recipes that i found, also some from stw members, when i posted a similar question last year. send me an email (my email in prof) and i'll fire it over. same goes for anyone else.

I've recently been doing the following which is very nice:
Onion
French beans
Broad beans
Corgettes
Peppers
Mushroom
Baby corn
Cherry tomatos
Spinach
Chuck it all in a big pan, whack it on the hob with the lid on and leave like that for about 25 minutes. Mix in some herb d'provence and salt & pepper and away you go. Very nice with chicken or salmon either grilled or in the griddle pan 🙂
