Walking round the supermarket got me wondering on seeing all the jars of goose fat, what happens to the rest of the bird? There isn't anything else goose that is cooked and for sale.

prefer roasties done in olive oil, goose fat is overated.

I've still got about half a pint of goose fat left from last christmas. Use it occasionally for potatoes. Amazing the price it gets sold for in the shops.

Maybe unsold geese get turned into petfood come january?

You want proper fatty fat that is lard.

The liver is used for Pâté, but I'm not sure about the other bits...
