I have one question:
When these 'expeditions' take off, what happens during the flight until it reaches its destination (8 years in this case I think)?
Is there a team watching all the time or does someone log on every now and then to see what's happening? If it's the former I wonder if they've got any jobs going because that sounds like a great job!!

A spacon job isn't that glamorous, but can be a stepping stone to other positions. The esa "european space operations centre" (esoc) is based in Germany, and people are employed under local employment laws, so it is a little bit complicated now for British citizens to get jobs unless they already have rights to work in Germany (thanks to brexit).

When these ‘expeditions’ take off, what happens during the flight until it reaches its destination (8 years in this case I think)?
While Cassini-Huygens was on the way to Titan there was a team finishing the software for the Huygens lander so it could be uploaded to the spacecraft.
And these probes follow complex trajectories getting gravitational slingshots off other planets/moons so they can do some observations of them while they're passing.
