Hey all,
I just got hold of some Pheasants off a friend and Im wondering about doing a simple yet tasty meal. My mate just chucks it all in a casserole or curry but I reckon it will ruin the flavour if put in with something strong.
Any suggestions?
make a light curry with some 'weaker' spices, cumid seeds, corriander, mango and a few other bits. Just avoid the 'curry powder' and you'll be fine. does make for a dandy curry by the way, or just roast it and have some fairly glorious sandwiches!

Roast it with some roast spuds, parsnips, kale and bread sauce. lovely
1)Fry Onion, garlic and bacon pieces.
2)Cut pheasant into pieces & shallow fry them for a while in (1).
3)Pour in a tin of tomatoes & a bit of water covering the Pheasant.
4)Half a chicken stock.
5)Add salt, black pepper, a pinch of sugar and herbs.
6)Stew it for a while until soften.
Optional.
1) Worcester sauce.
2) Soy sauce.
3) Lentils - need to soak it over night first (but watch out if you put lentils in as you need to keep stirring otherwise it will burn)
4) Wine.
5) Carrot or potatoes (if not using lentils)
6) Paprika for colour.
It very easy and once cooked you can eat it for few days by re-heating.

ve been having.
Just debreast and dethigh, thighs for curries etc. Breasts wrapped in bacon 20 mins, bobs your uncle.
Would go for a casserole option, I think, as it's late (past) in the season.
roast em stuff the birbs with some bay leaves no more than 6 some fresh sage and if you can get some sand fire but you can only really get sad fire if you live on the coast if you google search you'll find oads of cooking sites got some recipes that won me the annual tri forces cooking contest 2 years on the trot from the net 😉
I always curry them - the best meat for curry you can get as it has a strong flavour and firm meat. My wife gets them from the shoots she works the dogs on, and I just can't be bothered to pluck and draw them. If they are ready prepared and frozen, try roasting. If they still have their feathers on just gets the breasts and thigh meat off and casserole/curry them - they will be at minimum 8 days old if they were shot legally.
Cover in bacon, roast. eat.
