Just made a seriously nice cake so thought i would share the recipe.
100g/3.5 oz butter
225g/8 oz S.R. flour
pinch salt
100g / 3.5 oz demerara sugar
100g / 3.5 oz desiccated coconut plus extra for sprinkling
2 beaten eggs
4 tablesp milK
1. grease a 2lb loaf tin and line the base with baking paper
2. Seive flour and salt into a mixing bowl and rub in the butter until it resembles fine breadcrumbs
3. Stir in the sugar, coconut, beaten eggs and milk and mix to a soft dropping consistency.
4. Spoon mixture into the loaf tin with a palette knife.
Bake in oven 160C/ Mark 3 for 30 minutes
5.Remove the cake from the oven and sprinkle with coconut. Return to the oven and cook for 30 more minutes until a metal skewer inserted into the centre comes out clean.
