make anything then add chilli until your eyes sting when cooking it, if the mrs complains then.... job done! 😀

Search for Jamie Oliver and Chilli Beef Brisket. Make sure you make the home made Guacamole too. You can stop looking elsewhere!

Warning 1: The volume of food in the recipe is for something stupid like 25 people.

Warning 2: Once you have eaten this mince with kidney beans in it will always be a disappointment!

This was pretty good the other night, though I'd fry some bacon or pancetta with the onions to give it a bit more depth and add 2-4 tbsp flour into the cooked mince to help it thicken nicely later on.

Oh and he seemingly missed the point by not adding any (well enough) chilli's... throw a good few in.

EDIT: I do admit this was the 1st chilli I've made from scratch that actually did taste like a chilli and not 'hot' bolognese

My chillis are a thing of pure awesomeness! The secret is lots of cinnamon.

I like Hestons slow cooked one. Its a pretty standard recipe but cooked for 4 hours. Gives a really deep flavour. Also Schwartz Cajun spice mix is really good. Its all the usual spices, just easier to use.

White chili - made with white beans, hominy (or samp) and chicken and / or turkey. Something along these lines:

You can get hominy (white or yellow) from a good asian or african grocers. Seriously - white chili is brilliant - I prefer it to normal chili now.

No no no no NO. Anything more than a touch (tip of a teaspoon) of cinammon in savoury recipes ruins everything.

I don't have a recipe, I just chuck stuff in until it tastes right.

Then, on portioning up, add Dave's Insanity Sauce to mine.

Particularly liking it with Piri Piri flavoured wedges at the moment.

I'm in a chilli withdrawal cold turkey at the moment after ODing on some "South Devon Chilli Farm Bhut Jolokia Mash" and deciding to give it a bit of rest. I'm a proper chilli addict but an absent mindedly large session of that stuff (I'm partial to just dipping raw mushrooms in the pot - not much of a recipe I grant you) not only gave me the ring of fire (a given) but made my piss sting so badly I thought the old fella was bleeding. Stuck between the twin horrors of pain now or hold on till I wanted to burst and muchos pain later.

Chocolate, cinnamon... my 'secret ingredient' trick is a blob of Marmite. I buy the squeezy stuff expressly as Cooking Marmite.

Smoked Chillis (Chipotle, although smoked paprika works pretty well) and coffee

Couple of squares of dark chocolate, half a glass of red wine, a little marmite, maybe some Worcestershire sauce... and lots of fresh chilli, of course!

Made a vege one last week for a change, kidney beans, red lentils, tomatoes, chillis, worcestershire, and a veg stock cube, turned out very nice.

Sorry, but you need to check out the recipe on Homesick Texan blog, had some tonight, simply amazing. "Tomatoes, did cowboys have access to tomato?"

Hmm, I do

1kg minced beef
1 large onion

Fry that up, then add

4 chilis
1 red pepper
400g chopped tomatoes
6 cloves garlic
1 bottle of beer (usually Corona)
2 beef oxo cubes
3 teaspoons ground cumin
3 teaspoons oregano
1/2 teaspoon paprika

Plus I use from 3 to 10 drops of Mad Dog 357 Special Edition for kick. You could use 2-4 teaspoons of cayenne pepper.

Simmer for as long as possible, add more beer as required. Add a couple of squares of very dark choc about half an hour before serving.

Though these days the hot sauce has to go in just mine afterwards as my 4 year old isn't quite ready for that yet 😉
