As long as the value of the stamps is right, can I use ordinary 1st class stamps on letters to Australia?

Yes.
Stamps have a value, you just need the right value for the postage your item needs.
Ones that say '1st' on them are valued at the current first class price I think.

If you use enough then yes. (You can't just use one and expect it to get there).
