Ok so I've friends and their nippers coming tomorrow, we really want a bbq but it's certain to rain.
Any quick ish cooking recommendations for food? I'm thinking some sort of fish plus quick cook steaks.

What fish best would be best for bbq?! Something like whole bream or similar, should I avoid individual fillets?

And what type of steak should I hunt down?

Thanks bbq gods

If you have a BBQ with a lid then you should smoke a joint (the meat variety, not the weed).

Light BBQ, add smoking chips, add joint, replace lid, retire to house for 30 mins...
Check and add more smoking chips/charcoal, replace lid, retire to house for 30 mins - Repeat until ready and eat indoors 🙂

I've got a classic Weber coal medium sized. Don't mind a bit of rain but don't wanna be prodding food all afternoon !

Leave the lid off while its raining and make a lovely nourishing charcoal and ash soup

A successful barby needs a finite amount of essential ingredients

1) a crate of Stella
2) burgers
3) sausages
4) another crate of Stella
5) tomato ketchup
6) cheese singles
7) another crate of Stella (just in case)

Anything above this simple formula is ridiculously contrived, middle class nonsense which nobody will thank you for! It's probably Jamie Oliver's fault!

Fish? FISH?!!!

Binners, I shall have to correct you.
1 - Some bloody good beer. Stella is not invited.
2 - Steak. Good steak. It shall be introduced to the BBQ on the most fleeting of terms.
3 - Sausages - On this one you are correct. From a good butcher, of course.
4 - Burgers - Either from the butcher, or home made.
5 - More of the aforementioned fluid.
6 - A little light salad.

Go and get a pork loin joint and some kind of dry rub (at a pinch BBQ seasoning will do) coat the whole joint liberally with the rub and leave for an hour or so. Pub lots of charcoal maybe half a 5kg bag on one half of the BBQ and light, when it's ready add some wood chips, put the pork in off the coals so it cooks indirectly and give it an hour and 10 with the lid on. Do not open it while it's cooking. Serve however you like. If you have room add a chicken as well as the pork.

You say that, but I bet you're the kind of monster who'd introduce vegetable kebabs into proceedings, aren't you? As well as fish? I bet you're the type of man who's sat though a whole programme featuring Hugh Fearnley Whittingstall without throwing the telly out of window, aren't you?

I don't know how you sleep at night!

Salmon fillets in tinfoil - lemon juice ,salt, pepper .
No need to turn them over either.
15 minutes
Job done .
And Stella naturally, before and after, as well as during.

Cheers folks. I've got copious amounts of Stella so I guess the rest will just all fall into place 😀

If you have access to a proper fishmonger get hake steaks, make a little pan of chopped onions mushrooms fried in butter with white wine then put the steaks and a bit of the sauce in foil parcels. If it rains just put the steaks on top of the sauce in a frying pan and simmer till cooked.
