Running low and little CJRs need bread! Anyone spotted any sources away from the usual supermarket bun-fight?

I’m only finding it in zero waste type shops, presumably as they buy in bulk and not the small bags that are sold out.
That does require some specific infection control. Not just in the shop, one in one out in this case on top of all the surface contact points, but when you get the stuff home.
So the flour I have now is for two weeks time. That and it’s getting baked.
I read somewhere that it’s actually a shortage of packaging as it comes from China and companies are struggling to get hold of it.
Got some from our local bakers yesterday.
Nothing in supermarkets.
We ordered bread mixes directly from Wrights. Took a while to arrive .
Ring your local bakers. Mine sold me 10kg of strong white.
Amazon have in larger quantities, I've got a 10kg arriving later today. It is not cheap though.

our local baker (JG ross) is bagging up their bulk supplies in plastic bags and distributing to their stockists( typically local spar type shops) so worth ringing round locally perhaps
Yes. Aldi, co-op, Sainsburys, M&S and Morrison’s but they disappear quick. Already a thread on this.
No plain flour, but Shipton mill selling bread flour. We did a combined order with 3 neighbours and bought 16kg bags.
You need to register to get a slot to user their online shop though.
Morrisons this morning had a decent stock of their own brand 1kg plain and BeRo plain. Last week they had plenty of the 500kg bags. They seem to be getting stock where our local Aldi and Sainsbury's don't.
Stock levels this morning in general were good, with a reduced stock of things that no one ever normally buys (ie low production capacity) but dickheads stockpile. UHT milk, tinned spam etc

Look in the curry / rice bit in your supermarket. 10kg bags of Atta / Chapatti flour which is brown duram wheat and fine for making bread. Plenty in stock in my local supermarket - several aisles away from the rest of the flour so easily overlooked when they sell out.

There is a surplus of UK wheat but as stated above not enough packaging or packing facilities to pack it in retail packs.
Buying a 16kg bag would be my suggestion.
@tomd - that's one of the best typos I've seen in ages 😂 I had fits of giggles and had to move away from the computer! I'd got mental images of little old dears with forklift attachments on their mobility scooters all patiently queueing outside Morrisons.
I tried to persuade the missus that we could turn the backyard into a corn field. She said the absence of soil was an issue. I think that's just negativity thinking, but am looking into flooding it and growing rice or pasta instead 🙂

I bought 10kg of chapati flour, I usually get it in 5kg, made some suet pastry with it, was fine. I'm sure it would make decent bread too if needed.

Its not so much the 'round the world bit' - you'll maybe get small bags of chapatti or gram flour there. But most supermarkets will have a bit of space dedicated to whatever minority population there might be locally - and end of an aisle with polish home comforts or whatever - and usually a bit of shelf space with sizeable packs of flour, rice, daals and so on.
Those Pasta fields are lucrative business i reckon!
Difficult to cover your costs though as pasta will only grown in boiling water.

We used to make Chapati flour here and its really just a standard bread flour with no added gluten, so makes very good loafs of bread.

Our local Coop has started selling massive units of common goods like flour, rice, beans etc. from a wholesale supplier who presumably can't shift it elsewhere because catering facilities aren't open.
So if you need a 3.5kg bag of bread mix or 10kg of rice, Cinderford Coop is the place to go.

Yeah I used that name as wasn’t sure how to word it, regardless as I say it’s something I’ve noticed Scotland is better at doing. We have a have a sizeable polish population here but not really much of stock on polish goods. Berwick which is a further up the road has a better stock and there’s a shop selling polish produce too.

Lots of flour on ebay. Some of it up awaiting your bids... others, like 16kg for £20, is that expensive?
I'll admit it when I came home and told the wife I'd spent £250 on half a metric shit-tonne of flour she was less than pleased. That displeasure has only increased as all of our meals are now flour based. Bread pudding, bread, white sauce over toast, fried bread in homemade breadcrumbs etc. The kids have made an entire model village from salt dough as well.
I know that for those of you that knead flour and can't get it this might seem like a first world problem.

Our local supermarkets are devoid of flour & yeast but our little local bakery currently has flour and live yeast which seems to work fine in our breadmaker; 60 pence worth goes a surprisingly long way!
The local shop have had 500kg delivered today.
Check out your local wholesalers. We have a bakery and fresh food wholesalers who have opened up to the public, as their usual commercial clients ( hotels, restaurants etc ) are closed. Lots of products, most not in huge quantities as well, and you're supporting a local business.

Our local gastropub is buying in bulk and then decanting into 1kg bags.

As I have an almost unlimited supply of flour, I exchanged 15kg of 12% protein bread flour for 18x7g sachets of yeast with a very nice lady at the other end of our road 🙂

Made some soft pretzels last night so now have no plain flour left.
The local shop only had cardboard bread left so this morning I made a white loaf and because the only flour j could get hold of a couple of weeks back was granery- my first granary loaf.
Seems to be turning out well so far at first proove. Whole meal breads always been a mystery to me -always ends up dense like a brick where as I can get perfectly light and fluffy white bread. (Hand made not machine)

Yeast is never an issue. The house is full of yeast. - not all of which are suitable for baking mind 😉

Add vitamin C, crushed tablets work but better to use powder available from bulk powders in small bags.
Re yeast - not into sourdough, but it should in theory still be possible to grow more. Thinking of putting some in sugar and water, fermenting it til the sugar is gone but the alcohol is not too high, then straining the sediment. Assuming it's going to be dormant yeast rather than dead? Is this how they do it commercially?

are you kneading it the same as white? wholewheat have sharp bran fibres which cut the gluten when kneading. i know when i swapped flours if making sourdough, id try and use a 'no-knead' method for WW. theyd still come out heavier tho, i think theres less gluten in WW to start with....
Wholemeal is great for soda bread. Do half plain, half wholemeal to make it less dense.

Am trying out some Chapati flour from the mosque supermarket
500g flour, 500ml water (seems it absorbs more water than normal flour), 10ml salt and a teaspoon of yeast. Left in covered bowl over night after mixing with a fork - also seems it doesn't like being kneaded, tears up the dough.
Will report back after baking tomorrow.

Our Sainsbury’s local had both (plain and strong white) yesterday, but we had already bought a 16 kg bag of bread flour from a local bakery (Bako) earlier in the week. Yeast is more of a problem - current plan is to reserve remaining easy bake dried yeast for pizza dough, make a bit extra and use the extra as ‘old dough’.
I managed to get an order slot from Shipton Mill. Hopefully it will arrive in the next few days.
Their bulk bag size was 25kg not 16kg.

@sadexpunk - I kept checking every few hours for about a week. I think on Weds about midnight I checked before going to bed and hey presto I entered my email address. It was like an out of body experience

You can get 500g of dried yeast in eBay for about £12 delivered
I'd run out of chapatti flour and my daughter went to do the family lockdown shop on Thursday, and returned, triumphantly with a 10kg bag of medium atta. I've got enough strong white and strong wholemeal to make a couple more 500g loaves, but after that it'll be experimenting with the atta.
Making chapattis I use roughly half as much water as flour, so a mugful of atta to half a mug of water, kneaded for a couple of minutes, rested for ten for the gluten to develop, then rolled and cooked on the tawa. This guarantees a proper "puffed" up chapatti when flamed. Makes about 6.
For my usual loaf I use 500g of half white/ half wholemeal, 7g dried yeast, 10g salt, 25g butter, 320 ml water. Kneaded for 10, rise for 1.5 hours, knocked back and rise for another 40 mins. Baked in a 1 1/2lb tin with a steam tray in the oven for 30 mins at 200 this produces excellent results.
Are we thinking the atta will behave differently to the wholemeal flour I usually use?
