Got lighting twin & earth and single cable 1 red wire going down to under cupboard lighting in kitchen but I want to add 2 more on new kitchen cupboards . Can I cut cables in ceiling add a junction box and then go to 2 more cupboards to create more lighting , cheers

Yes but you need to know which wires are doing what - is it two way switched? have you a permanent live in that lot or just switched lives?
Might be easier just to parralel connect a new light on the other cupboards with the one you have but a 2&E plus a red sounds like a bodge to me
