I now have a smart watch and it just has an arrow on a blank screen to direct you. If needs be you swipe to the map screen.

Not that I'm aware of. You can set alarms if you you go off track or for reaching a waypoint, but in visual terms, I think you're stuck with the map screen and arrow on that.
Or you can use the Skyline feature and follow the arrow on that which basically points where you want to be headed when following a route with big blue vector arrow things, but power hungry I think, and more suited to walking than biking.
I don't know if there's an app that'll just show a simple arrow on a blank background. I suspect most phone apps major on showing mapping as well.
There's an app called Crowsflight that has a similar sort of thing, but not exactly the same.

On a slight parallel, I reckon the [url= https://beeline.co ]Beeline[/url] has off-road potential. It's essentially a glorified handlebar-mounted pointer arrow on a watch-sized sort of platform that links to an bespoke app on a smartphone.
The idea is that the arrow always points towards your destination, but you can take roads of your choice in its general direction. All of which isn't much use for mountain biking, but they're apparently adding the facility to upload a GPX route to the app so that the arrow points to the next waypoint on the route.
If it works, it could be a cracking 'at a glance' way of following a route without needing to consult a GPS or smartphone and sounds like it'll do the job in a slightly different way. I'm quite intrigued, could also work well for road riding.
It is sort of possible (on the iphone version anyway).
If you follow a route, then press the add button to track your ride, you can then set up another screen to have the navigation arrow on it. You can only have a minimum of 2 sections so not quite what you wanted but as close as I can see is possible.

Is it down to orientation as in is it because the phone is flat that it goes red? I don't use it so much now but before the arrow used to go yellow if the phones compass needed calibrating. Maybe it's something to do with that.
