I’m rebuilding from 2*10 XT to 1*11 XTR, I need mount for the shifter but want to get out at the weekend. If I forego the top cog will it work? Is the cable pull the same?

mmm... I run a 10-shifter with a 11-mech but that's on a 10-cassette. All good.
Your cassette is 11 though, and a 11 cassette isn't simply 'one sprocket wider' than a 10. Can you put a 10 cassette on by any chance?
