Am I supposed to push the black button right in when disconnecting ?

Or is there a technique to disconnect without releasing air?

The button is to dump all the air pressure in the shock so you can reset it. The air released when you uncouple the hose from the shock is from the pump, not the shock.

their is air in the hose/pump itself so there is no method that wont involve some air escaping

Just unscrew from the valve. The hiss is air coming from the pipe not out of the shock/fork.
