I'm thinking the round, skinny tubes of the steel bike would probably hold significantly less mud than some of the moulded offerings I have seen.
1gm of steel will always be lighter than 2gm of carbon, what type of mud?
Is one covered in gt85? Is the carbon one going quicker?
What is the temperature, wind speed & humidity?
What about feathers? They're pretty light...
What tyres?

If its local mud, then the extra weight of the mud will be counteracted by the amount of brake pad it grinds away.

Everyone knows a lb of lead is heavier than a lb of feathers as feathers are lighter. We also know carbon is lighter than steel so a lb of carbon is lighter than a lb of steel. Mud weighs more than carbon but less than steel so therefore the mud will make the steel frame lighter. The result is that a really muddy steel frame will end up being lighter than a carbon one - simple physics really.....
