I am just finishing a 27.5+ build as a bit of a winter hack (term used loosely).
I have a Vee Tire Crown Gem 3.0 on the front, it is a monster.
I like a mud guard that mounts on the lower legs a la the Rock Guard stuff but they are too narrow to accomadate the tyre.
Any suggestions for something similar with more room width wise.

SKS Grand DAD would do the job. Ive used one of them on a fatbike to good effect
or fabricate something like a Rock Guard from a milk carton
what forks are you using?

Mucky Nutz bender fender worked fine for me with Trailblazers on both a Rev and a Pike 29er fork. I did need an extra zip tie to make it follow the bulge on the revs a bit more closely, but it was easy enough. Not sure how much wider the Vee is than the TB, but if you fasten it down properly the Muck Nutz only reduces the clearance by a mm or so on each side.
Mucky nutz XL works fine on my boost rebas.
What about with a rigid fork?

Mounted on an old Velocity Blunt 35 and the fork is a 29er RS Sector.
The tyre is huge compared to the Trailblazer, thinking about getting another for the rear as the Trail Blazer looks a bit meh in comparison.
Gone with a Mucky Nutz XL as I wanted as much coverage as possible.
Build nearly there, getting excited.
For interest:
Rim width - outer 35mm inner 30mm
Tyre pressures at 25psi (just pumped up tubeless not riding pressure)
Trailblazer 2.8 - height 62.9mm carcass width 64.8 tread width 58.3
Crown Gem 3.0 - height 65.9 carcass width 70.1 tread width 73.8

I'm still not sure if the Crown Gem will fit in a Pike when mounted on a 45mm inner width rim though. Which is what I really wanted to know.
Sounds like it's around the same size as a 2.8 Fatty on 45mm rim. (74mm tread width)
