Am getting sore hands when on my gravel bike (fine when on mountain bike) so looking for some fingerless gloves. The Castelli Arenberg gel gloves look promising with lots of padding. Any others to consider?

Ive just bought some from Santini that weren't bank breaking and really nice quality with next day delivery and free returns, 20% off also at moment. https://www.santinisms.co.uk/products/accessories/accessories/mitts/

Gel pads under bar tape?
Double wrap tape?
Thicker tape?
Relaxed elbows?

All things I’d try before gloves. Not sure I’d be relying on gloves to a dampen shock.

I have some of those Castelli mitts and they're decent, but I also run gel pads - at least I think I do, it's been ages since I changed the bar-tape, erm, yes, U do - under the tape and that makes a big difference for me. You're never going to feel cushy on a gravel / cross-type bike off road, but it definitely takes the edge off things.

Supacaz bar-tape is good and last for ages, unlike Lizard Skins stuff which just wears through ime.

Elbows . .
Yep, this.
Adjust your setup so that this is natural.

Also free and quick to lower front tyre pressure, it doesn't need to be as high as rear. You could also try something like Redshift Stem.

Specialized do some body geometry ones with very thick padding, I've got some as my wrists are buggered.

Move saddle back or reduce stem length/increase rise.

I've got Endura Hummvee Plus mitts

and they work for me. I used to have Fox Ranger Gel mitts, and I also liked those.

Gloves help you grip easier so you can hold on less tight. Not the other way around.

I've been suffering with a bit of pain in my palm on bumpy stuff for some time but after buying some Specialized Double Gel mitts no pain! Well 'appy.
