Just put my first ever High Roller on, never had one on a bike or ridden one before. (a cheap (relatively) plus one from CRC)

Any well known stuff you've never tried out?

Sram drivetrains. A mixture of they've never been on bikes I've bought and when building up bikes I've always gone for Shimano.

I have SRAM on my Stumpy. It's ok. I think, by choice, I have only ever _chosen_ Shimano though. I grew uo with it and Deore is just really good value for money.

I've never tried to go 1x<big number>. My bikes have always been either 3x (for the older one) or 2x (newer ones) and i can't really see the reason for changing. Soooo much money for little perceived benefit.

Tubeless, droppers, thru axles, fat/plus, boost, 27.5”, 11 speed (or even 10 on an MTB), clutch mechs, sprockets larger than 36t, head angles slacker than 70 degrees, e-bikes, Strava…

Fixies, single speed (on an MTB, I've ridden them on shitty shopping bikes), toe clips, steel frames (on decent quality MTBs, I've ridden shitty cheap steel frames but never a good one), carbon fibre anything (stem spacers excluded).

I've never owned a HT, I went from rigid in the 90s straight to FS in the mid 2000s. I've ridden one once I think.

I've never tried SPD / clipless or whatever it's called.

Struggling with this!

Hardcore hardtail is the only thing I can think of, but then I demo'ed a Transition Throttle, which maybe falls into this category... so, as in other aspects of life.. I've tried it all 😆
Very specifically -
never tried 5-10 shoes (but there are a pair in my porch).

Tubeless. I love the idea but because my mtb can be out of action for several months and the recommendation is to change / throw away sealent every 3-6 months it seems too wasteful for me.

Don't fall for that one, just add a bit every 6 mnths or so.

Working in bike shops and bike couriering I've tried most things. The difficulty in my own choices is knowing what new things might work for me. Sometimes I'll take a risk and it works (Loop Bars for example). Other times I just can't get on with it/them (MTB STIs).

I'm only tubeless because my new bike came that way. My world remains unchanged.

Frankly I'm getting a bit miffed having to top up the air pressure every other ride.
