Type of bike do you ride for this kind of commute?

depends on the type of towpath? some are smooth and surfaces and some are muddy and lumpy..

also distance

would of thought hybrid, tourer, CX, roadified MTB would be best

I've used CX and a MTB (summer/winter respectively) for that type of surface.
