Are they just there to stop you deforming the alloy of the arms by tightening too much?

I appear to have lost em.. can I get some more (XT cranks)?

Yes you can get some more. I scoured the Shimano (or maybe Madison) spares section of their website when I lost one on my old Saints. Eventually found the things, noted down the code and got my LBS to order some for me. Cost a couple of quid.

I can't imagine what I've done with them tbh - just re-building the bouncy bike after 6 months off.. must be around somewhere...

I'm sure there was a similar post last month...apparently they are just to stop you scuffing the alloy arms if you are a bit hamfisted with the spanner?

The only cranks I've seen with them was the pedal washers for Saints.

they increase the effective area of the end of the pedal shaft where it hits the alloy of the crank.

I've lost them off my LX cranks. Was advised that if your careful fitting the pedals then it should be fine without. No problems so far

Are they bonded onto the cranks? The Saints are loose as standard, and available as spares.

If the ends of the pedals (the bits the butt up to the crankarm) are round you should be fine, if there are flats at the end then use the washers, otherwise they tend to gouge the crankarm.
