Gonna be at the North Norfolk coast tomorrow, Thetford only an hour away, is it worth sticking the (rigid, singlespeed) bike on the back of the car and heading down there?

Yep.

Head to Brandon (not high lodge) and take the red route.

Enough to have a blast on for a hour or so. Should be nice an dry too.

If you're going to be in North Norfolk there is good riding between Sheringham and Cromer from Prety Corner and at Bacton woods near North Walsham. Not trailcentres but plenty of fun. Thetford is worth the trip, bit you'll find more hills and technical riding closer to your destination. It takes a bit of finding mind you.
