So a guy I know has come out for a ride with me a few times, then bought himself a hardtail. He's ridden road for a very long time, he's now in his 60s I think. No issues with his fitness levels but very new to off road.
I'm sticking to fire road and some easy trails and he's improving. Wondering what to do with him next? Anyone done similar or remember what more experienced riders showed you when you started?

trail centre blue would be my suggestion.
nice and rolley with a hint at the fun available in more technical stuff.

Where are you, llandegla red is good for beginners. Not that it's easy, but gives them a taster
Where do you live? Plenty of suitable routes in the Peak District for a novice.
I have recently been doing this - trail centre blues is good as is nice easy woodland single track.
Blue level to get skills / confidence
We're both near Swinley ride there from home. Plenty of easy riding, currently riding once a week with him. His bikes set up OK now and he's bought shoes so no more road peadals. Getting off the saddle is one of his issues and that's something that will improve with time.
Teach him to ride. There is only 3 rules of riding off road.
Bikes goes where you look.
Don't brake in the obstacle.
If you don't make it in your head you won't make it for real.
Give him your tips to improve his riding, but always with a pinch of salt as there is a many different riding style as there is riders.
Plus build up gently. Try to find a narrow singletrack with no rocks/slopes/roots so he can get used to the width, and start from here.

Thanks for the suggestions so far. Seems odd teaching him to ride as he's ridden a lot more than me. 'you're tyres are a bit hard? that pointy thing sticking out of the rim...'
There's a guy who runs skills courses locally so I'll point at that sometime.
Is just riding about best or would sessioning stuff work better?
