I need some good rims that will cope with varyng widths of tyres 25 - 35ish) so open pros are a no no. These will be going on a set of king hubs.

had 2.4,2.1,35mm CX and 25mm road tires on them, disc only though

Open pro's are fine up to around 35mm. i've used them myself.

I went with Halo Aerotracks most recently as they look nicer, cheaper and only slightly heavier. Got them from Winstanleys and they came reasonably quickly despite their out ot stock message.

I use Mavic CXP 33's. fine with a 38mm tyre but also used with a 25 with no issues. Strong and slightly aero so the crap slides off
