Road brake cables have a different end on them.
Gear cables are the same as MTB.
I mostly use Shimano outers & inners.
For bar tape, I like the Lizard Skins DSP stuff. It's really "sticky", so you don't have to grip very tightly. However, almost any tape will be fine (I have some Easton stuff on the tourer ATM). If you're doing longer distances, consider something like the Phat Gel or Fizik Bar Gel underneath the tape too.
Are you taping them yourself?
Go to bike shop; this bit is important..
Buy the tape that matches the colour of either your saddle or your frame.
Best cables are
a) of the correct type of nipple for your STI units,
and b) single ended; this bit is important because you can fit new cables without unwrapping bartape if you get the single ended ones.

Sorry, I always forget the insulating tape, then have to go out again to get some.
Those little bits of branded tape that come with the bartape are a bit... amateur... if you know what I mean..

Foe some reason I always buy Jagwires and Easton cheap off ebay, because I always forget when I'm at the shop.
I'm well endowed in the tape department, what with being in the electrical trade. I've even got two finishes of black tape.

...and don't forget those little cable end clamping things; nothing says Eddie like an unravelling cable...
