Fwiw pretty much every dh rider in the world cup uses carbon bars, I've never seen one snap yet, but then mibbe they're not putting as much stress on them as you do.

I'd be particularly careful about torque when fitting a carbon bar and quite cautious about a sh one, but other than that I think they're a non issue safety wise.
The only real bone of contention some places seems to be that some people assume all carbon bars will be vibration cancelling compared to alu - which isn't the case. They can be stiff too, just depends on the way the mfr decided to spec the layup.
