So I've tracked down the annoying squeak to a pedal, which is moving about on the axel. Before I take it apart and ruin it completely, are v12s servicable/fixable? Is it likely a bearing has collapsed and I need a new one? If so where can you get them from?

depending which end it is.
Dead easy to strip and clean v12s, and the bearing is easy to remove, but the bushing on the inboard side is a bit of a PITA to prise out.
If you just want to kill the squeak for the time being, strip, clean and regrease. It's literally a ten minute job to do both pedals with an allen key and a socket.
yup that's what I do with mine, never had to replace a bearing yet. The little bit of play in them just seems to stay that way and never get any worse.
