I’d quite like to put 2.3 Maxxis Highroller II and 2.3 something else on the previous version Stans Crest rims (24.4mm).

Is this likely to be ‘sub optimal’ and cause a lightbulb tyre shape or is it ok?

Just trying to save a bit of dough and avoid buying a set of 30mm Hunts.

What's the internal rim width? ~19mm+?

If so, you should be fine, just don't run the pressures too low.

On One Reet'ard rims are ~20mm internal rim width, my 2.35" G-One Speeds don't look too bulb-shaped... When fitted, I run them at ~35/45PSI (front/rear) with tubes.

I have a Magic Mary 2.35 which measures up bigger that most 2.4 tyres and a 2.4 Mountain King on the same rims, the Mary is the bigger of the two by 3mm.
Had them for about 3 years without a problem, I've run the front as low as 18psi over rocky terrain without issuses, the rear I usually have between 23-25psi.

There's a Mavic "engineers talk" thing on this and safety (which is different to your performance query, I know...)

Mavic Engineering - rim/tyre/pressure combination

Kind of road-biased, but it combines tyre width, rim internal width and pressure to show what they see as "safe" combos.

So probably stay within that, which it looks like you will be doing. If you are thinking about support in cornering etc, maybe a low profile tyre with strong sidewalls would be the safest bet to reduce any roll?

Thanks for you input chaps much appreciated. I guess from people’s views it will work, I just guess the sensible th8ng to do though would be to get the 30mm Hunts and take the guess work out of things.
