Anyone have any ideas on the lightest combination with all parts from the same manufacturer? Ritchey WCS? Easton?

Schmolke, AX Lightness, or more sensibly look at New Ultimate, who do very nice stuff for a more sensible price. I've got some seatposts and flat bars if you're interested?

This is purely dreaming I'm afraid. The bar width I like is 620mm so maybe have to stick to the mainstream manufacturers, although I see New Ultimate do one in that size.

Are the New Ultimate - or for that matter the AX & Schmolke for Mountain Bike or Road Bike?

New Ultimate are for either, although they do say XC only. Schmolke and AX do some that are either, and some road specific ones.
