So. Do I just screw the cleats (yellow floaty) onto the shoes (DHB) roughly central and let the float in the pedals (105s/SPD-SL) take up any adjustment? Or is there more I need to be doing?

Are you taking road riding seriously? Meaning have you bought any arm warmers yet?

You want to be setting them up so the ball of your foot is roughly over the pedal axle.
Angle will be dependant on personal preference. How much float on those cleats?

Make sure you back off the spring tension til you get used to being clipped in.

ball of foot over axle, as for the direction in which to point the cleat, this can be a it more complicated.

I ride heel in so i have the cleat positioned so when clipped in my feet are slightly heel in, if i adjust the cleats so my feet are parallel i get knee pain. I have heard that if you sit on a table and let your legs dangle the cleat should be adjusted so that the way your feet point in the way you feet are clipped in.

Float helps, but do not assume it will make up for badly adjusted cleats.

Slight hijack

I'm considering putting a pair of crank bros candies on my road bike

Will the gods of Tarmac smite me down?

If they are the SH11 cleats then there's 6' of float.

As Stuey said set up with the ball of the foot over the axle and the rest is personal. Try setting them up with the flat part dead level/square and have a little ride adjust them either turned in or out to suit how you feel .

I used that method and it became quite apparent which way to move the cleat after quite a short ride round the block, this bit is just like setting up Mtb cleats but there seems to be less float.

Defo back off the spring as they are much more of a snap out

I assume they come on the weakest setting out the box as the little marker on the back seems to be in the position which suggest max decreased tension (as described here). So have left them like that.

How can one accurately set them up though? As its not like you can loosen the cleat screws so you can get into position properly, then unclip and tighten them up as the unclipping process moves everything out of alignment.....or am I doing it wrong?

I actually have some. Endura sent me them by mistake instead of the leg warmers they had meant to send for the 4th time. Let me keep 'em.

Trial and error.
