...will the chain skip or will all be fine and dandy? I'd say the chain and rings have had a fair amount of wear, but I want to put a new cassette on.

Always put on a new chain with a new cassette.

Rings/chain/cassette will wear together. If you replace one part of the system after some period of use then it won't work well with the "old" worn parts.

IF you are lucky, the chain might not skip (or snap!).
BUT, even if it runs ok (doubtful) the worn chain will wear the new cassette out more quickly.
and that is the best case scenario.
i would echo the advice above, chain and cassette get changed together.
personally, id run the old ones as long as possible first, as long as they are working ok.
