had a few ace weeks in Scotland over the years, done the lakes/dale/n y moors. did the trans Cambrian route and a bit more last year.
so looking for a weeks offroad tour, with some nice beer along the way.
any ideas greatly appreciated.
South Downs Way....there and back?

That's the Lon Las Cymru isn't it? Not off road...
Choose an area, buy a few maps and plot out a route! South west is good
East Coast including beaches as far as you can go! Norfolk and Suffolk are lovely places and not thought about as there's no mountains but loads of nice areas and just a different vibe to normal rides.

Have you looked at canals and also the sustrans map page gives a quick heads up on cycle tracks.
we've done
Reading - Bath - Bristol(railway path) - Portishead (via Pill) as the spine with some loop outs
could also start Swindon - Reading via Ridgeway, then as before
loop outs - Swindon/Marlborough area, Avebury
partly done - Brecon Canal and Taff trail
you can go Basingstoke/Weybridge/Godalming/Shoreham (cross SDW)

Have you done the classic Cairngorm loop staying in hostels, feels wild and remote, with some great sections of singletrack, not a massive amount of height gain, sticking to the glens with a few passes.
day 1 Blair Atholl via the Gaick pass (inshriach singletrack) Aviemore
2 Tomintoul via braes of Abernethy
3 Glen Avon - Braemar
4 Blair Atholl via Tarf water(great singletrack) Glen Tilt
If you want to add a proper mountain to Fergal's great circular route, take an extra day while at Aviemore and ride out to summit Sgorr Gaoith overlooking Glen Feshie. The Stalker's trail down the west side of the summit or the Mule trail on the NW are both ace 800m+ descents.
Might sound a bit boring but I'd be thinking along the lines of linking up Canal towpaths together with a hill or two on days 3 and 4 then back to the flat stuff.
Liverpool-Leeds canal first, then head South maybe to Avon-Somerset then loop back up North along the Wields of Hereford?Shropshire and pick up another canal back to Leeds..

Not done it myself, but there's other sites with info, and a thread on here too.
At least it's only 330km and 13,100m of climbing...:-)

How about the Wessex Way, 250 miles, starts from Weston Super Mare across the Mendips and Salisbury Plain then links up with the South Downs Way to Eastbourne.
Been thinking of something similar myself.
Not having cycled around Cairngorm that loop sounds tempting.
yeah i like the sound of a loop like that. been through the middle of the cairngorms but not done a loop.
