22lbs of finest Rib of Beef - How long to cook at what temperature to get perfect, moist, medium rare beef?

Apararantly about 30mis per pound on gas mark 5.

I have been told you need to leave it to rest for 20mins to.

Cook at 240C for 15 mins then drop to 190C and cook for 15 min per pound.

Yup if it's 22lb like he says.

I'd maybe cut it in 2 or more and cook along side each other.

Neither have I but then I've never cooked anything for 5-6 hours and wanted it to end up moist. I could, of course, be wrong. ๐Ÿ™‚
