Hope mono - old silver 2 price style with sintered pads.
These are the only brakes that have made my bike frame not vibrate like a loon, but they fade badly down a steep hill under heavy braking.
Is this a known issue with these old Hope or would a switch of pad material to organic make a difference?
Depends on what you mean by fading, what are the symptoms?
Try a bleed thru with new fluid - old fluid can boil.
Bike simply does not slow down after a decent decent when using the back brake. Lever does not go spongy, brake just works considerably less.
They have new liquid in them, well new from a year old sealed bottle. I know Dot fluid is hydrophilic, but I would have thought a sealed bottle would be OK.

Does sound like fade, it's caused by too much heat. Standard pads generate less heat, so may well help, a larger rotor should dissipate the heat better too(Hope can do custom rotors with no cut-outs, and parallel braking surfaces that may help with your vibration issue, it did with mine).
I will give organic pads a go. Cheapest option.
Mine faded in exactly the same way (mainly riding in the Lakes) - fixed by fitting a bigger rotor (and ditching my obsession with trying to save a few grams...).
No vibration problem on mine with the bigger rotor (but obviously the frame has a lot to do with this).
If the organic pads don't work, it probably wouldn't work out too expensive to buy a +20mm adaptor and a 160 disc.
i was going to say, you really need to fit a bigger rotor, as it'll dissipate heat quicker and give you more leverage, so more power.
140mm rotors are for anorexic whippets who ride swinley only ;0). I'm suprised they stop you at all!
You could try a downhill specific brake pad, like the EBC red.

I'm 15 stone and ride Guisbrough/NYM, real men(tm) just grab the levers harder! I sometimes worry for my carbon levers and the Ti bolts holding everything together!

Avtualy, small rotor = more heat = more time bedded in, even in the shittiest parts of winter I can ride without worying about the pads, I've had the same set of organics in my singlespeed for 18months now and they show no signs of wearign out any time soon! The downside is they glaze over in the summer so occasionaly need the brake dragging whilst deliberately riding in mud.
