Cycle Kingdom in Fleet (Spesh dealer) are good.
big new Evans just along the A31 in Guildford; I'm not a fan of Evans themselves but my experiences in the new store have been all good (like everywhere, depends on the staff), or there's also a new Giant concept store in Guildford itself.
There's also Cycleworks too, but they might be a bit specialist to have a good range of hybrids
