Moving from 160mm frame & fork to 140 and want slacken the angle without the weight penalty of a 160 fork. Any suggestions?

on-one do a +5mm headset (deeper cups) mostly to stop fork/downtube interfaces but would help I'd guess.
or get a 'long' 140mm - it's the axle to crown distance that's important.

You won't make up all 20mm of stack with a headset though - as www said you'll want a fork with a long axle-to-crown, ie not Fox.

Isn't there a Cane Creek headset (S3?)with a thicker lower cup for just this purpose?- though I'd like to find a magic headset to steepen head angles myself.
there is a "tall baseplate" +5mm for chris king headsets...

I had a cane creek headset before, a special one with a higher baseplate...it lasted exactly 3 months last winter....

as a ball park 10mm difference in headstock height gives you 1 degree of head angle change ,,,
before all the Technical "experts" get on their high horses note the use of ball park ! in the preceding sentence
if you could cope with the change of bb height etc a 24 inch rear wheel would come close to what you want

10mm on a 1100mm wheelbase bike gives ~0.5degrees.

yep, 20mm per degree on a normal mtb. 5mm is a 1/4 degree, but it's a permanent adjustment, rather than fork length which is only longer until the fork copmresses. 5mm on the headset is roughly = to 10mm on the fork when you take sag / working fork height into account. a +5mm cup (and maybe a bigger front tyre or bit of compression damping) will be a noticeable but subtle tweak, i've done it to a few bikes to experiment. it's deffo a tweak rather than a handling change though.

I always find it difficult in technical situations, where lower tyre pressures give more grip, but harder tyres slacken the head angle for more stability. It's hard to know what to do, isn't it?

Its a shame no-ones invented an adjustable travel fork for these sorts of situations.
Use a +5m and a thinner inner tube (or use tubless as tubless deforms more) giving you -3/4mm.

It may be as much as 34mm of 'stack' difference if its something like a Fox 32 QR 140mm and a Fox 36/Rockshox Lyrik

Does only your front tyre wear down then? If both are worn together, it won't make any difference to the angles
I find lowering the psi in the back and increasing the psi in the front gives as much as 3mm.

Have you actualy ridden this frame yet? What if it's alrerady slack enough?
Or are head angles the new bass controll on car stereo's, manufacturers probably spend £000's geting the accoustics (or head angle) right, but everyone knows best and turns the bass (angle) up (down) +1.

I've got a Cane Creek S3+5mm, although it's more to stop the cable stops on my Meta 5 from ****ting the fork crown.
Acros make a 6mm crown race riser to fit their AH-06 headset which already has a large stack height.
J
