Does anyone know if the slx rd-m7120 12 speed derailleur will work ok with a single front ring & 10-51 rear cassette instead of buying the rd-m7100. I’m guessing there’s a reason why shimano have designed two separate derailleurs, it I can’t see anything specific on their product pages.

Product specs say no, it’s only for the close range 12speed cassette.
That usually means that although you may be able to bodge it together, it’s using the derailleur out of spec and there’s a danger it’ll disintegrate at some point.
