Any good guides out there? always end up with some rubbing.

Type of brake? Type of pad?
If the pistons don't go right back it [i]might[/i] be too much fluid in the system or it might be sticky pistons.
Some aftermarket pads have thick paint on them that stops them fitting neatly into the caliper, some aftermarket pads are just too thick
Have you tried messing with the caliper position??

On the same subject - does it work on mineral brakes or only DOT ones?
The red rubber grease is a grease that is safe on the seals used in hydraulic systems. I don't know about mineral oil systems - are the seals diffent?
Just google red rubber grease - motorcycle shops sell it.
You can loosen the caliper position adjustment bolts, then hold the brake levers on and re-tighten them. Seems to work for centring the calipers quite often. Your rotors might be slightly bent though?
