It is as simple as changing out the shifter and reconnecting the cables to the Grip-shift connection or will I have to change out the cable / derailleur etc.?

You will need a new rear mech (SRAM).
FR mech will be fine as is.
Recommend new cables as a matter of course - no need if quite new though.

won't need a new rear mech if you get sram attack or sram rocket shifters - shimano compatible.

yep, Sram Rocket gripshift with rapid rise XTR mech here...
