Heading over for a couple of weeks and going to be based in Queenstown and Wellington
Surely someone on here has some advice for where to hire bikes and where to ride?
I'll be in Khandalah with no car (but can probably get a lift to a shop) and then flying to Queenstown for a few days and fancy an E-bike advanture with a very unfit mate

Mud Cycles in are worth a look. Not the handiest for Khandallah but very handy for the good riding in Karori. Mt Vic is worth a blast for short cheeky runs.
In QT if you have e-bikes then that makes things like Skippers Canyon much more attractive, the climb back out (on a gravel road) puts off some folk. Links in well to Coronet Peak tracks, Rude Rock, Zoot, etc.
The bike park will do rentals, probably including a few e-bikes. Otherwise the big chain is Torpedo7 (formerly R&R sports). They have outlets in every major town so might be able to move bikes to hire to suit...

Vertigo bikes are the folks to see in Queenstown. Decent range of bikes so if you want to do some bike park stuff and some pedalling they do bikes to suit. You can also see if they are Queenstown Bike Taxis are running shuttles for ruderock or other spots.
QT bikepark is good fun. Lots of other trails around qt but expect them to be steep.
