Marine grease around bearings.

Shock lube (I use Fox Float fluid) around fork and shock seals, which I use often after cleaning the bike as well.

Copper grease only for torqued things you want to be able to undo. Careful near seals. Some are not advised to get the stuff near.

Carbon assembly paste when putting components on the bars, and likewise the seatpost into the frame (whether carbon or not - though even more important if carbon. If you use this stuff, you can use a lower torque when fitting stuff, and it helps avoid corrosion esp between carbon and ali components).

Thread lock (which isn't grease) - on low torque bolts that you don't want to rattle lose. I never bother on high torques like GXP crank bolts or cassette lock rings. The torque is enough and I prefer copper slip so I've got a chance of getting them off again with less effort.
