would an insurance company still pay out upto their limit (2k on my M&S policy) if a bike worth more than this was stolen, or would they refuse to pay out at all?

No they won't payout. I'm with M&S and I asked them the question when the policy terms and conditions changed. Still worked out the best deal for me though.
