Any ideas for 2-3 day bike trips around Auckland, I'm actually staying in the Riverhead Forest area so somewhere near there would be ideal? Planning to take a tent so campsites would be good, and if there is a pub nearby (so I don't have to lug my food) even better! (I appreciate that that may be a uniquely British thing lol 😉 )
I'll be on a hardtail with panniers + rack.

check out the bike packing new zealand group on facebook, lots of good info there and folks who are willing to help out with plans etc

Have a look for the recent Rotorua BigRide which went up through Raglan and N , some nice spots up near Kawhia
