I've got Spesh Sawtooths and they're great apart from lacking grip in the growing gloop of winter. What tyre rolls and wears well on all surfaces but provides enough grip to get you up a first gear slopfest?

WTB Nano seems to be the go-to tyre for this?  It has an open tread but also a near continuous central ridge for road use...I'm sure there are better wearing tyres if you are doing a large portion of road riding but it seems very happy in winter slop.

I have settled on smart sams they roll good enough and give decent grip off road and cheap.

None.  You need to pick what is of most importance and veer towards that.  The tyre will always be a compromised choice if needing fast rolling but also good in mud.

As the conditions between Summer and Winter are so different I would think different tyres for those seasons would make more sense as the comprises will be in different areas.

None will roll smooth as a road tyre and grip really well in mud but WTB have good options, Nano 40s cover both uses better than most. They wear fast on tarmac though and the tread feels a bit nervous on a fast road corner. Resolutes are far better on tarmac than you might think and great on wet tracks and trails. Riddlers also good, can get a bit bunged up in mud but great for a drier dirt and road mix.

I'm finding Surly Knards not much slower than the summer Sawtooths, but heaps more grip offroad.

Ritchey megabite 38 have been my go to winter tyre. Admittedly I only ride roads to get off roads so smooth tarmac is minimal. Roll ok enough but are splendid on everything else.

Avoiding wtb having had a nano and a riddler rubber blister off the casing (using Stan's).

I put gravelking sk's on my Boardman cc in 38c. Great off-road, but by all that is holy are they draggy. I go from the fastest person in my group on my road bike to struggling to keep up and having to pedal down hills.

I've run the Continental AT Ride (larger version, ie 42mm of the Conti Cyclo X-King). They're pretty good actually, roll well, are light, reasonably puncture proof, and good value (£15 from Bike Discount). Good in a range of off road conditions. I wouldn't choose them if I was doing 50+ % road riding, but for my riding, typically 70% off road, they're great.
