so if i have a 68mm shell width, what size axle would i be looking for?

depends on the cranks you want to use, and the centre line of the bike. Most new-ish bikes are designed around a 50mm chainline, older bikes tend to be narrower than that.
TBH, bikes tend to vary a lot, some best place to start for advice is the manufacturer.
